Bellevue’s culinary landscape is experiencing a dynamic transformation, with a host of new establishments enriching the city’s dining options. Here’s a look at some notable additions that are shaping the local food scene.
New Restaurant Openings
Sabine Café
Set to open in early 2026, Sabine Café will bring its Mediterranean-inspired all-day dining experience to Downtown Bellevue. Located on the ground floor of The Eight, a 25-story office tower, this marks the café’s first expansion to the Eastside. Sabine is renowned for its brunch offerings, craft espresso, house-made pastries, and a dinner menu that draws from Mediterranean flavors. The Bellevue location will also feature an expanded grab-and-go menu tailored for the office clientele.
Itadaki Yakiniku
Since its opening in September 2024, Itadaki Yakiniku has evolved to offer a more flexible dining experience. Transitioning from an eight-course set menu to a full à la carte format, guests can now select from a variety of Japanese Wagyu, premium meats, seafood, and local vegetables. Additionally, the restaurant has introduced a custom omakase experience, allowing diners to enjoy personalized meals based on their preferences and budget.
Club Seltzer, KODE Pizza, and EatDirt
In October 2024, Bellevue welcomed three innovative dining spots: Club Seltzer, KODE Pizza, and EatDirt. Club Seltzer is the Pacific Northwest’s first seltzer-focused bar, offering vibrant, zero-proof beverages crafted from adaptogens, fresh fruits, and botanicals. KODE Pizza specializes in Detroit-style pizzas, available by the slice or whole pies, making it ideal for both quick bites and group gatherings. EatDirt emphasizes farm-to-table dining with a menu featuring seasonal ingredients sourced from local farmers, including sandwiches, salads, and a bone broth bar.

The City of Bellevue, in partnership with the Washington State Food Truck Association, has launched the Grand Connection Street Eats program. This initiative brings a rotating selection of local food trucks to public spaces, offering quick and delicious lunch options. Trucks are stationed at City Hall Plaza on Tuesdays and Thursdays, and at Compass Plaza Monday through Thursday, from 11 a.m. to 2 p.m. Seating is available at both locations, providing a convenient dining experience for the downtown community.
